Quinoa with Black Beans in Orange Sauce



1. Bring water to a boil. Add quinoa and bring to boil again. Reduce heat, cover and cook for 15-20 minutes until quinoa is tender.
2. Place cumin, ginger, balsamic vinegar, orange juice and zest in small bowl and whisk together.
3. Remove quinoa from heat and fluff with a fork. Add black beans to quinoa. Add bowl of orange sauce to quinoa and black beans. Stir until thoroughly mixed.


To toast cumin seeds, place them in a dry nonstick pan on medium heat. Stir with wooden spoon and cook until the aroma is released. Remove from heat and use a mortar and pestle or small spice mill to grind.
