Mujadara (Lentils and Rice with Caramelized Onion)



1. Put the lentils in a large pot with 5 cups of water and heat on high until boiling. Reduce heat to medium and simmer for 30 minutes. Add the cinnamon and allspice to the lentils and stir. Continue cooking on medium heat another 15-20 minutes until the lentils are tender.
2. Bring a large pot of water to a boil. Add rice to the boiling water and cook like pasta for 30 minutes. Remove from heat and drain the rice. Return the rice to the pot, cover and let sit for 30 minutes until the rice is tender and the moisture is evenly distributed.
3. In a large pan using high heat, brown the onions for about 10 minutes stirring frequently and using 1-2 tablespoons of water at a time to keep the onions from sticking to the pan. Reduce the heat to medium-low and continue cooking the onions until dark brown, about 6-10 minutes more.
4. Add the rice and lentils to the onions and mix well. Season with salt and pepper to taste.
