Berbere Stew



1. Mix lentils with water, garlic, onion, and spices.
2. Cook, uncovered, over medium-low heat, for 20 minutes or until the lentils have softened. Watch carefully and add water if it starts to dry out.
3. Add the tomatoes and heat at least 15 more minutes.


Good alone or over whole grains such as brown rice.
If you don't have Penzey's Berbere seasoning, you can find recipes for this seasoning online. The Penzey's version lists cayenne pepper as the first ingredient and most of the online recipes I've seen use less cayenne than other spices. I've experimented a couple of times and settled on 2 tsp as the amount I like of the Penzey's spice. Your mileage may vary.
